Fall is a favorite time for Maryland native Matt Whitehair, Executive Chef at the casually elegant Osprey Point Restaurant. He especially likes preparing fresh game to add to the menu. The menu changes monthly and is adjusted daily to reflect the freshest available in meats, seafood, and produce. One of Chef's most important suppliers is Chester River Seafood; it's not unusual for him to get a 4AM call offering him the best of the day's catch. This year, the Osprey kitchen staff has planted its own garden on the grounds, and most of the vegetables served come from there. When the restaurant is closed in January, Chef and his sous chefs try out a variety of new recipes in preparation for the coming season. This past winter, they began curing items like bacon, pancetta, and pickles. The resulting charcuterie is one of the more popular items appearing on the menu now. Chef Whitehair began his career in Chestertown MD, moved to Boston to hone his skills at Sasso Back Bay, and then returned to the Eastern Shore as sous chef, then Executive Chef at Osprey Point. Diners will usually be treated to a visit by the charming Chef Whitehair, checking on his guests to be sure they are happy with the food and service.

From March Channel 9:
Herrington Harbor, owned by Stuart and Hamilton Chaney, has won the first DNR Maryland Marina of the Year Award. Runners-up were Spring Cove Marina in Solomons and Tidewater Yacht Service Center in Baltimore. Herrington Harbor was singled out for creating four acres of tidal wetlands, setting aside 600 acres in preservation, cultivating oysters and installing buffers to filter stormwater.
Last year, Tidewater Yacht Marina in Hampton discovered that its 170-foot-long megayacht dock just wasn't mega enough to accommodate all of the megayachts that wanted to stop over. The marina hosted 75 vessels of over 90 feet in length last year, but had to turn a number of others away. So over the winter, Tidewater added another 100 feet to its megayacht dock and some mega-powerful electrical receptacles, including a couple of 100-amp three-phase 480 volt plug-ins. Tidewater also increased its fuel-delivery speed to more than 40 gallons a minute.
Windmill Point Marina, which occupies an enviable position at the north entrance to the Rappahannock River, has been purchased by Vinings Marine Group. Over the past few years, the 150-slip marina has had a complete face-lift, with new floating docks, bathhouse, restaurant and swimming pool, but has continued to struggle financially. The purchase by Vining, which owns six other Bay marinas, including three in Little Creek, should finally put Windmill Point on a solid footing.
Two Bohemia River marinas are now under the management of Texas-based Marinas International. Bohemia Vista, with 141 slips, and
Hack's Point Marina, with 85, are both owned by CNL Financial Group of Orlando. Marinas International manages more than 30 marinas around the country.
